Burrito Struggle

I've become incredibly better at making rice; the spices I use may not be obvious pairings, but the result is fantastic. I started this hoping to be able to replicate the taste of Chiptle's Veggie Burrito (with no "veggies", made with black beans and brown rice, lettuce, cheese, sour cream, guac, and medium salsa; that's my usual order), and I have utterly failed to do so, but I've made something that's just as filling and tasty, and eventually my attempts have moved from trying to get that taste right to evolving this recipe into something good. I don't include salsa anymore, and I've been skipping guac because it's a bit expensive. One of the big innovations has been to use lime juice for about a third of the fluid I'm using to make the rice; the slightly sour taste it makes gives me a lot to work with, particularly with enough garlic salt.

I'm trying to figure out if I can get either some lentils or tofu into the mix well; the latter is challenging because I'll have to figure out how to season the tofu separately (definitely a hard tofu), the former is challenging because I don't want its tastes overwhelming everything else.
